Wine & food, not food & wine
"Chris and Stephen were so good that 'excellent' seems such an inadequate word to describe them!" ~ Bill O'Riordan
We all know the moment, when we are handed the vast wine list and sit staring at it before simply asking for the sommelier’s recommendation. With wine being an important part of the meal, it would be useful to know what varieties complement different dishes.
This course invites you to spend a day with our Executive Sommelier, Stephen Nisbet, to talk, taste and debate your way through the maze that is food and wine matching. Joined by one of the Academy chefs, Stephen will introduce you to complementary flavours, using basic principles behind food and wine pairing, that you can then apply when next entertaining or dining out. Other activities include how to find faults in the wine, successfully decanting port without ruining it with cork crumbs, and more insider secrets.
This class is equally suitable for those with no or limited wine knowledge right up to the wine guru!
Given the nature of this course and the fact you are spending the day drinking wine we suggest overnight accommodation or a taxi home! Click here for a list of local places to stay.
Ideal for: wine buffs, those interested in wine and food combinations, expert
or amateur alike.
Benefits: learn from an enthusiastic Sommelier how to pair wine with your
meal to achieve a balance of flavours.
For bookings of up to 3 people, we invite you to book online using the system below. For more than 3 please call 01488 607 415.

Rising Stars Apprenticeship Blog
In addition to the day to day running of the The Fine Dining Academy cookery school the Academy also coaches our "Rising Star Apprentices" to become proficient restaurateurs capable of running a financially viable fine-dining experience. The apprentices have been blogging about some of their learning experiences during their training with us.
