Learn how to make the most of our great British produce in a Master class with Will Holland, Head Chef of the multi award winning Michelin-starred La Becasse in the "Foodie Capital of Great Britain", Ludlow.
'Will' really is a modern master in the making garnering critical acclaim from serious food critics and customers throughout the country. Taking inspiration for his cuisine from the abundance of superb local produce on his doorstep Chef Holland will guide you through modern French cooking techniques that are used in Michelin-Starred restaurants demonstrating how to get the most out of our seasonal produce, typically selected on the day of the course.
The basis of the course will vary depending on the time of year. Join us in spring for example, and you will be introduced to the preparation of fresh whole Salmon, learn how to make the most from different cuts of Lamb and top techniques for young spring chicken. The summer months red fruit and berries take centre stage, British grown fresh vegetables are also in abundance at this time of year as are our native fish so you will be full hands on learning innovative new preparation methods and dishes. Venison and artichoke are amongst the topics for autumn and winter will focus on festive preparations with master classes in game and canapés.
During your day you will be preparing the dishes that you will later dine on in our beautifully styled country dining room with service and wine close at hand.

Join us for an afternoon of Champagne, canapés and superb cookery demonstrations at The Fine Dining Academy in Yattendon, Berkshire. Your hosts for the afternoon are Michelin Starred Chefs and the BBC’s Great British Menu Finalists Alan Murchison & Chris Horridge.
