With such a focus on convenient, fast food in these current times, people often see healthy dishes as bland and fussy to prepare. However, our Academy director and chef Chris Horridge has put together this course to introduce you to wholesome, simple and delicious dishes.


The course uses the latest nutritional information and teaches you how to prepare nourishing meals that can easily be recreated at home. You will discuss several cooking methods, such as cooking without sugar while maintaining sweetness and how to create balanced meals with maximum nutritional content. Chris is pioneering what he calls '3 dimensional cuisine,' focusing on presentation, flavour and nutrition. After a fully hands on day, you will come away feeling motivated that healthy food and its benefits can easily be produced at home.


Chris Horridge has won wide critical acclaim for his unique approach to cuisine and not only in the UK. In 2009 American food and wine magazine rated his restaurant as one of the world’s most exciting to eat in of only 18 restaurants globally.
