Stephen Nisbet – Renowned Sommelier

Stephen started work in the Hospitality industry from school as a summer job in Edinburgh, his home town, and had the fortune of joining an employer proactive in training and development. On deciding to join this hotel full time he had the chance to attend a short WSET wine course, and the rest, as they say, is history.
Stephen stayed with this hotel for five years picking up experience in most departments including the kitchen, before eventually leaving to join the five star Balmoral Hotel for a fruitful two years where he was able to start his wine development under their new sommelier who is still a friend and now supplier to the group.
Stephen joined Alan Murchison’s team in the summer of 2005 at L’ortolan restaurant after experience at the top level in this country at highly reputable multi–Starred hotels and restaurants including The Great Eastern Hotel London, Lettonie in Bath under Martin Blunos, and Heston Blumenthal’s Fat Duck in Bray.
Stephen is now the Executive Sommelier for The 10 in 8 Fine Dining Group overseeing all wine, spirits and beverages at the group’s four restaurants. Stephen consults with the Michelin-starred chef at each of these restaurants ensuring the perfect drink combination for the regularly changing menus.
