Chris Horridge is The Fine Dining Academy chef/director

He has a wealth of experience from cooking in the Falkland Islands for 1200 R.A.F airmen, right up to the very senior levels in some of the UK’s top 2 and 3 Michelin starred restaurants making him perfectly suited to direct all our courses including our bespoke team building programs.


Chris’ slightly unusual career path has seen him win various awards not least of all a prized ‘Acorn award’ for his achievements in the industry thus far.


The most prized of prizes of course was in 2006, when he was awarded a Michelin star retaining it for over three years.


Under his direction, in 2008, International magazine Conde Nast Traveller recognised his restaurant with their ‘Gold List award for food’ one of only 18 Hotel restaurants globally.


More recently and within two months of his arrival, Chris’ most recent venture was rated by American food and wine magazine as being one of the world’s most exciting restaurants to eat in 2009. No mean feat considering the menu was virtually sugar, gluten & dairy free.


The reason for such critical acclaim? Chris is pioneering what he terms ‘3 dimensional cuisine’ which is based around presentation, flavour and nutrition, with top scores from some of the U.K’s premier food critics being proof it actually works.


Currently he is one of the very few Michelin starred chefs researching the implications of nutrition understanding within cuisine, and the only one who creates dishes designed to help enhance nutrient uptake and bio-availability.


Chris has previously worked closely with various universities, scientists & a nutritionist on joint projects investigating these areas of science. Currently along with The Nutrition Research Group which he founded in 2008, he is putting together a project to increase awareness of the positive impact of preoperative nutrition for patients soon to have surgery.


With an eye for detail, a mind for innovation and a selfless sense of fun, Chris brings to the 10in8 team an immense amount of experience from many disciplines within the hospitality industry, including various television & radio programs.

Rising Stars Apprenticeship Blog

In addition to the day to day running of the The Fine Dining Academy cookery school the Academy also coaches our "Rising Star Apprentices" to become proficient restaurateurs capable of running a financially viable fine-dining experience.
